Healthy Carrot Almond Cake Recipe

If you’re looking for a cake that’s not too sweet and healthy (ish) you’ll love this carrot almond cake recipe. Made with fresh carrots and ground almonds, it’s a healthier option that doesn’t compromise on taste. Plus, with the help of a Thermomix, it’s easy to make!

Delicious homemade almond and carrot cake with a dusting of coconut. One slide is cut and you can see the moist inside.

Ingredients:

  • 300g grated or finely chopped carrots
  • 200g ground almonds
  • 180g sugar
  • 4 eggs
  • 80g flour
  • Grated peel of 1 lemon
  • 1 teaspoon of baking powder
  • A pinch of salt

Instructions:

  1. In a large mixing bowl, whisk the sugar and eggs until smooth.

  2. Add the ground almonds, lemon peel, and salt, and mix until well combined.

  3. Fold in the grated carrots, flour, and baking powder, and stir until incorporated.

  4. Preheat your oven to 180ºC (360F) and grease a baking tin with oil or butter.

  5. Pour the cake mix into the tin and bake for 35-45 minutes (depending on your oven) or until a toothpick inserted into the center comes out clean.

  6. Once the cake has cooled down, decorate with a dusting of icing sugar or grated coconut, if desired.

Thermomix Instructions:

  1. To grate the carrots, put them in large chunks and blend for 20 seconds on speed 5.

  2. To make ground almonds, mill them for 10 seconds on speed 7.

  3. Add the eggs and sugar to the Thermomix and blend for 30 seconds on speed 5.

  4. Add the ground almonds, lemon peel, and salt, and blend for 30 seconds on speed 4.

  5. Fold in the grated carrots, flour, and baking powder, and blend for 40 seconds on speed 4.

  6. Preheat your oven to 180ºC (360F) and grease a baking tin with oil or butter.

  7. Pour the cake mix into the tin and bake for 45 minutes or until a toothpick inserted into the center comes out clean.

  8. Once the cake has cooled down, decorate with a dusting of icing sugar or grated coconut, if desired.
