  • 300 g grated or finely chopped carrots
  • 200 g ground almonds
  • 180 g sugar
  • 4 eggs
  • 80 g flour
  • Grated peel of 1 lemon
  • 1 teaspoon of baking powder
  • A pinch of salt

Instructions
 

  • In a large mixing bowl, whisk the sugar and eggs until smooth.
  • Add the ground almonds, lemon peel, and salt, and mix until well combined.
  • Fold in the grated carrots, flour, and baking powder, and stir until incorporated.
  • Preheat your oven to 180ÂșC (360F) and grease a baking tin with oil or butter.
  • Pour the cake mix into the tin and bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  • Once the cake has cooled down, decorate with a dusting of icing sugar or grated coconut, if desired
