Ingredients
  

  • 1 large red onion thinly sliced
  • 1 cup apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Optional: Peppercorns and bay leaves

Instructions
 

  • Place the sliced red onions in a clean glass jar.
  • In a small saucepan, combine the apple cider vinegar, sugar, and salt. Heat over medium heat until the sugar and salt dissolve. Add the optional spices
  • Pour the vinegar mixture over the sliced onions in the jar, ensuring they are fully covered.
  • Let the mixture cool to room temperature, then seal the jar.
  • Refrigerate for at least 1 hour before using. The longer the onions marinate, the better the flavor.
