Cottage Cheese
Instructions
Add the butter to the pan and once it is is hot, add the chopped spring onion and frozen peas directly
When the peas are almost done, poach one egg in water (3 min max for runny yolk)
Mix the cottage cheese with a squish of lemon juice and a bit of grated lemon zest
Add salt and pepper to the peas, and plate with the cottage cheese and egg on top
