Peas with poached egg is a light and delicious dinner with 22 grams of protein.
The lightness of the peas, the freshness of the cottage cheese and lemon and the richness of the egg makes you forget that this dish is under 500 calories.
It is also super fast to make, perfect for a weeknight.

INGREDIENTS
- 1/2 Spring onion
- 150 grams Frozen peas
- 20 g Butter
- 1 Egg
- 1 Lemon
- 2 tbsp Cottage Cheese
INSTRUCTIONS
- Add the butter to the pan and once it is is hot, add the chopped spring onion and frozen peas directly
- When the peas are almost done, poach one egg in water (3 min max for runny yolk)
- Mix the cottage cheese with a squish of lemon juice and a bit of grated lemon zest
- Add salt and pepper to the peas, and plate with the cottage cheese and egg on top.
- Enjoy your peas with poached egg!

Green peas, or “garden peas,” are the small, spherical seeds that come from pods produced by the Pisum sativum plant.
Strictly speaking, green peas are not vegetables. They are part of the legume family, which consists of plants that produce pods with seeds inside. Lentils, chickpeas, beans and peanuts are also legumes.
BUT, they are often considered a vegetable. Since green peas are high in complex carbs called starches, they are considered a starchy vegetable along with potatoes, corn and squash.
