Gazpacho means summer to me. Its one of the easiest and fastest things to make and a classic in Spanish cuisine.

Some ingredients might vary depending on the recipe, some add bread but I like keeping it light.

For people not familiar with this soup, it does not have chili, in fact in Spanish cuisine it is rarely used.

  • 1 kg tomatoes
  • 1/2 cucumber
  • 1 long green pepper
  • 1/4 onion
  • 1/2 garlic clove
  • Vinegar to taste
  • 20 g of olive oil


  • Blend all together with a powerful blender (Thermomix in my case) and adjust salt and vinegar to taste.
  • Some people strain it, but i prefer to have it as it is.
