Fresh Pasta Made Easy: Thermomix & Traditional Methods

Homemade fresh pasta is my new obsession. It’s so relaxing and rewarding to create something delicious from scratch. Forget yoga or meditation – this is my go-to for stress relief!

Tools

  • Thermomix (Optional): While I love the convenience of my Thermomix for mixing the dough, this recipe is totally doable by hand.
  • Pasta Rolling Machine: Essential for achieving that perfect, thin pasta texture.

Simple Ingredients, Amazing Results

  • 2 Eggs
  • 200 grams Flour
  • Pinch of Salt

Instructions (Thermomix Method):

  1. Combine all ingredients in the Thermomix.
  2. Knead on the dough setting for 2 minutes. The dough will be crumbly at this stage.
  3. Form the dough into a ball, cover it, and let it rest for 30 minutes.
  4. Roll out the dough using your pasta machine, starting at the widest setting and gradually increasing the thickness until the dough is thin and translucent.
  5. Cut the pasta into your desired shape and cook according to your favorite recipe.

Instructions (By Hand):

  1. Combine the flour and salt in a bowl.
  2. Create a well in the center and crack in the eggs.
  3. Slowly incorporate the flour into the eggs, mixing until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Follow steps 3-5 from the Thermomix method.

Tips & Tricks:

  • Use high-quality flour for the best results.
  • Don’t overwork the dough, or it will become tough.
  • Experiment with different pasta shapes and sauces to find your favorites!

Pasta Dough in Thermomix

Equipment

  • Thermomix
  • Pasta rolling machine

Ingredients
  

  • 2 Eggs
  • 200 grams Flour
  • Pinch Salt

Instructions
 

  • Put all the ingredients in the Thermomix
  • Mix 2 min on kneading speed. You will have a crumbly dough
  • Form a ball with the dough, cover and let it rest for 30 min
  • Use the pasta machine to roll the dough. The first time, fold it one or two times and pass it through the machine. After that, increase one number at a time until the dough is thin enough that is translucent.
  • Then cut the pasta in the desired shape.
