Homemade fresh pasta is my new obsession. It’s so relaxing and rewarding to create something delicious from scratch. Forget yoga or meditation – this is my go-to for stress relief!

Tools
- Thermomix (Optional): While I love the convenience of my Thermomix for mixing the dough, this recipe is totally doable by hand.
- Pasta Rolling Machine: Essential for achieving that perfect, thin pasta texture.
Simple Ingredients, Amazing Results
- 2 Eggs
- 200 grams Flour
- Pinch of Salt
Instructions (Thermomix Method):
- Combine all ingredients in the Thermomix.
- Knead on the dough setting for 2 minutes. The dough will be crumbly at this stage.
- Form the dough into a ball, cover it, and let it rest for 30 minutes.
- Roll out the dough using your pasta machine, starting at the widest setting and gradually increasing the thickness until the dough is thin and translucent.
- Cut the pasta into your desired shape and cook according to your favorite recipe.
Instructions (By Hand):
- Combine the flour and salt in a bowl.
- Create a well in the center and crack in the eggs.
- Slowly incorporate the flour into the eggs, mixing until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Follow steps 3-5 from the Thermomix method.
Tips & Tricks:
- Use high-quality flour for the best results.
- Don’t overwork the dough, or it will become tough.
- Experiment with different pasta shapes and sauces to find your favorites!

Pasta Dough in Thermomix
Equipment
- Thermomix
- Pasta rolling machine
Ingredients
- 2 Eggs
- 200 grams Flour
- Pinch Salt
Instructions
- Put all the ingredients in the Thermomix
- Mix 2 min on kneading speed. You will have a crumbly dough
- Form a ball with the dough, cover and let it rest for 30 min
- Use the pasta machine to roll the dough. The first time, fold it one or two times and pass it through the machine. After that, increase one number at a time until the dough is thin enough that is translucent.

- Then cut the pasta in the desired shape.
