Chili sin Carne

This chili might be one of the top 10 easiest recipes I’ve ever made, and great to feed a crowd.

I’m not vegetarian, but this chili has no carne, and it does not need it at all!

This recipe adds dark chocolate, which to me has the flavor key to the dish. Also, of course if you want you could add some mince meat as well, but it is taste as well without!

Chili Sin Carne

Ingredients
  

  • 3 cans of beans drained
  • 2 cans of chopped tomatoes
  • 1 can of water
  • 1 can of beer
  • 1 can of sweet corn
  • 100 g of dark chocolate
  • 2 chilies 1 if it’s too hot
  • 1 red pepper
  • 1 yellow pepper
  • 1 big carrot
  • 1 onion
  • Salt + Pepper
  • Olive oil

Instructions
 

  • Chop the onion, peppers and carrots and fry with a bit of oil in a pot until tender.
  • Add the rest of the ingredients and cook at medium heat for 30-40 min until the sauce thickens.

Notes

I started adding 50g of dark chocolate, but the flavor was not intense enough, so I added another 50g, but adjust depending on your taste.
You can serve it over rice, baked potatoes or on its own.
Optional toppings: Avocado, sour cream and coriander.
