Chop the onion, peppers and carrots and fry with a bit of oil in a pot until tender.
Add the rest of the ingredients and cook at medium heat for 30-40 min until the sauce thickens.

I started adding 50g of dark chocolate, but the flavor was not intense enough, so I added another 50g, but adjust depending on your taste.You can serve it over rice, baked potatoes or on its own.Optional toppings: Avocado, sour cream and coriander.
